What’s the one dish that says “Brooklyn”?

Now that cook-off pros Theo Peck and Nick Suarez have been named among the “Top 20 People To Watch” by The Brooklyn Paper, these guys have no choice but to raise their game. Instead of doing another beer, cheese, or chocolate showdown, they have designed something called The Brooklyn Roots Experiment, which asks New York’s finest amateur chefs to prepare dishes that best represent Brooklyn. But what does that even mean when Barneys is about to open up in the borough? Is it an old-fashioned egg cream or fancy French-Chinese fusion? Whatever it is, chefs are strongly encouraged to use the very best and locally sourced food/ingredients/products only. Part of this year’s Farm City Fair—the fall festival of the French Institute Alliance Française—the cook-off features the ultimate Brooklyn cooking expert Frankie Castronovo from Frankie’s Spuntino as a judge with others to be announced.
