For those of you who have been going into pork belly-with-miso-butterscotch withdrawal since Tailor closed, take heart: Sam Mason will be taking over the kitchen at Aldea for one night only. George Mendes, who opened his kitchen to Mike Lata of the Charleston’s FIG last December, plans to make a habit out of featuring guest chefs on Sunday evenings when the restaurant is usually closed.
The April 18th dinner will feature four courses for $110, including such Tailor favorites as the aforementioned pork belly with miso butterscotch and artichokes; foie gras with peanut butter, cocoa, and pear; passionfruit poached char with lime pickle and coconut, and an as-yet-unknown dessert. After months of focusing on Dinner with the Band, the new cooking-and-jamming series that debuts on IFC on April 27, Mason seems to exercising his cooking muscle as he prepares to head back into the restaurant fray.
