Cholula Deli is yet another of those southern Mexican delis that have carved out a dining room in the rear, in this case a very pleasant and spotlessly clean place hung with piñatas and decorated with colorful displays of Mexican sodas and other groceries.

The huarache — shaped like the rubber-soled sandal of the same name — is fashioned out of freshly made masa, used as a platform for refried beans, julienned greenery, squiggles of crema, and tinga, a fiery stew made with chicken in a chipotle sauce. The entire thing tastes earthy and delicious, and I could eat one of these for any meal of the day.
