Today is National Margarita Day, a great holiday of dubious origin that allows us to drink a lot on a Wednesday without feeling guilty. In honor of the holiday, Spice Market is having a half-off special on pitchers of its signature ginger margarita, making them $24 a piece. (Not bad!) But if you want to celebrate at home — closer to where you’ll be sleeping your margaritas off — we’ve got Spice Market’s recipe right here.
Spice Market’s Ginger Margarita
For the ginger lime syrup:
1 cup ginger, peeled, chopped and pureed in blender
1 cup sugar
1 1/2 cups fresh lime juice
For the margarita:
1 oz. Reposado tequila
1/2 oz. Cointreau
1/2 oz. ginger lime syrup
First make the ginger lime syrup: Bring lime juice and sugar to a boil. Remove from heat and add ginger. Let steep until room temperature. Strain through a chinois, pushing for total extraction.
Then make the margarita: Combine all ingredients in rocks glass with ice. Shake vigorously. Crust rim of glass with ginger salt and pour margarita back into glass.Squeeze lime wedge then drop in drink. Enjoy!
