Perhaps edibility is the only criterion for stomaching the wretched odor of some cheeses. At the Winter Stinky Cheese Festival, nearly two dozen of the smelliest cheeses will put that edibility to the test. For one, blue cheese ice cream is slated to make an appearance, which sounds curiously awesome for a type of cheese that typically ages a full fiscal quarter and whose rinds have been bathed in brine. Other festival hopefuls include Limburger, Camembert, and Époisses, whose 60-day aging period is so short that the USDA fears it could cause a listeria outbreak and bans its import. Moldy merriment begins with tastings at 404 Event Space, with nine restaurants participating from March 1 through 10.
