Best Gallic Grilled Sardines (2008)


Few things evoke the taste of the Mediterranean more than properly grilled sardines. Charred until the skin is silvery crisp and succulent and sweet inside, they are the stuff of seaside joints from Marseilles to Casablanca. Pastis captures this taste with two splayed fish atop a bed of bite-y arugula that masquerade as an appetizer but are really a taste memory of a Mediterranean summer.
