Magnificent Mole (2008)


A decade ago New Yorkers were introduced to mole poblano, an irresistible sauce laced with chiles, nuts, and chocolate, with the consistency of mud. With the advent of Red Hook's EL HUIPIL, we began to explore variations. Sprinkled with sesame seeds, the Guerrero version is toastier, and there's no better place for it than in this café's chicken enchiladas.
