Fall and winter is the time to eat fugu, the poisonous blowfish that must be prepared by a licensed practitioner in Japan. Most places in Manhattan serve a farmed version lacking in toxin, but seek out Chikubu if you want the real thing (the chef's qualifying certificate is in the cloak closet if you want to see it). The best part of the four-course ritual meal is the fugu sashimi, which arrives pinwheeled on the plate, gossamer thin and delicately flavored. Feel the tingle in your fingers! Note: Fugu will be offered starting December.
