Cacio e pepe is one of my favorite pastas, twirling damp hot tonnarelli (Roman fettuccine) in a big pecorino rind with lots of crushed black pepper. Located among the fleshpots of Second Avenue, CACIO E PEPE does it best. Given the name, are you surprised?
