When JEWEL BAKO MAKIMONO debuted last year as the third outpost of a microscopic East Village empire, it raised the bar on sushi, presenting an ever changing raw-fish menu that on a particular day might include amberjack, Tasmanian salmon, and the unlovely sounding but delicious gruntfish. Sharp flavors like yuzu zest and chive oil are deployed with abandon.
