The hand-pulled wheat noodles—which originated in the Inner Mongolian city of Lanzhou—are made right before your eyes. Eschew the "vermicelli" and stick to the hand-pulled half of the menu, where your choices run to 20 varieties. Tops is "hand-pull noodle w. Beef in Hot & Spicy Soup." It'll be the best $4 you ever spent. Runner-up is the one preferred by the Fujianese patrons, "hand-pull noodle w. Pork Bone in Soup," noodles with marrow bones in a big metal bowl. The steamed dumplings are similarly dope.
