Training under Chef Jonathan Benno at Per Se gave Mamak Street Cart chef-owner Erik Cheah the techniques he needed to elevate his cuisine above the standard street fare craved by late night revelers and the lunchtime crowds. This mobile kitchen offers southeastern Asian staples like beef rendang curry, a mixture of spicy short rib coated in a variety of sauces paired with coconut rice, vegetables, and a hard-boiled egg. To cool off, we recommend the barley pandanus, a rice-flavored drink with rock sugar that takes the heat off from the sambal chile lurking in some of the dishes.
