Mazeman is "ramen without the broth," one might explain to the uninitiated, and these delicious noodles mixed with ingredients like fresh tuna, bacon, and sea urchin have helped turn Yuji Haraguchi's Yuji Ramen into a bona fide superstar; each bowl offers a lovable combination of textures and flavors. After running a stand at Smorgasburg for two consecutive years, the chef upped the ante with a second show at the Bowery Culinary Center at Whole Foods. He'll soon open a standing location called Okonomi in Williamsburg, continuing the mazeman revolution.
