Best Use of Lotus Root (2013)


Most eaters would not expect lotus root to be the culinary epiphany of an evening (we certainly didn't), but if you visit Biang! in Flushing, it just might be. Lightly drizzled with ginger, chiles, and sesame oil, the blanched and thinly sliced lotus root shines through, crunchy, clean and thoroughly satisfying.
