Though the place ain't much to look at, La Kasbah cooks up the best couscous—moist without being sloppy, with each grain functioning as a separate entity. There's a choice of three, of which tfaya is most recommended, topping the semolina with a sweet skullcap of onions, raisins, chickpeas, and shredded chicken.
