Plopped into the wooden mortar, the plantain is vigorously pounded with the pestle to make the world-class mofongo at the National Cafe, the only place, as far as I know, that makes this delicacy to order. The fricassee chicken, black beans, and pernil are also excellent, but plan your entry carefully, since the excellence of the food and the smallness of the premises guarantee that the place is often mobbed.
