Best Butter Chicken - 2001
Chicken makhani, when done right, is a dish to savor: pieces of yogurt-marinated tandoori-cooked chicken in a tomato-based sauce that is rich with butter and often topped with slivered almonds. It is unfortunately a dish that has been so badly interpreted in so many Indian restaurants that at times it seems a real butter chicken is hard to find. I found the one at SHAAN a few years back when taken by the head of the Indian Tourist Office, and he should know his stuff. With richly flavorful, tender, moist chicken and a sauce in which the tang of the tomato can still be tasted, it's the real thing.
