Its operatives keep all selections at peak freshness, and even the most mundane items have a special flavor twist: fresh green beans, for example, are cooked with onions and a shake of chile flakes. Especially good are the brown-sauced oxtails, while the chitterlinswith a maximum of good porky taste and a minimum of skankare the tastiest in the neighborhood.
