Big Easy creole gumbo ain't too easy to find in these parts, which is why it's worth traipsing to Harlem for the gumbo at BAYOU. The twin thickeners of roux and disintegrated okra make for a very thick pottage, buoying the shrimp and hot tasso ham. Topside, a clump of white rice slakes the righteous heat.
