Foremost Xinxiang restaurant New York 2004 - CAFÉ KASHKAR

Bridging the gap between Uzbek on one hand and Chinese on the other, CAFÉ KASHKAR serves food from the remote Silk Road province of Xinxiang. Soups are king, or perhaps pasha, including chuchara and mampar, the former dancing with dumplings, the latter squirming with homemade noodles. Plov is alternately called plow and fried rice, but you may know it better as lamb pilaf.
