KUM RYONG
The homemade noodles called cha chiang mien fall apart in square strands as the dough ropes are beaten, and you can find them only rarely in Manhattan. Check out Koreatown's KUM RYONG ("Golden Dragon"), where "noodles with special brown sauce" comes with an inky sauce of onions, pork, and bean paste.
