Make sure you get the chicken kebab with the bone in (joujeh kebab chelo) at Colbeh, a kosher Iranian restaurant near Times Square popular with expatriate carpet merchants from Tehran, and Russian Jews too. The kebabs are slicked with saffron-tinted yogurt before being charcoal grilled, which leaves them moist and supremely flavorful.
