Among beer fanciers, ales that have been cured in casks—from which it has to be pumped by hand at the bar—have been all the rage. These beers are lower in carbonation, but display a richer flavor, after having undergone two fermentations. Though originally British in origin, many of these ales are now made locally, especially in Brooklyn. Kelso—which never comes in a bottle or can—is made in Clinton Hill, while Sixpoint Craft Ales are brewed right in Red Hook. The Sixpoint oatmeal stout is our favorite example of this brewing tradition. When in season, you can get it at the Water Taxi Beach and at various other places around town.
