Mac-and-cheese is a soul-food staple, along with collard greens and potato salad. Under the name "macaroni pie," the same dish is often a standout at Anglophone Caribbean establishments peddling the cuisine of Jamaica, Barbados, Nevis, St. Vincent, and Grenada. Of course, any number of Southern cooking places and comfort-food restaurants have it, too. Mac-and-cheese, this year, has been more popular than ever, and we stumbled upon our favorite version at The Obama Flavor C & S Food, where "C & S" stands for "Caribbean and Soul." Cut from a thick sheet, the mac-and-cheese is soaked in cheese sauce, with extra cheddar added on top, and the dish couldn't be more scrumptious in its single-minded focus on the family of simple yellow cheeses.
