Although high runner-up honors go to Wechsler's Currywurst, the truth is that the best sausages of the year, by far, can be found at DBGB, Daniel Boulud's international sausage emporium. It would have been a closer contest if it weren't for DBGB's boudin Basque, which is a meat-product masterpiece. A coarse and sticky mixture of pig's blood and pig's head is stuffed into a fat casing and sliced into black rounds for serving. A bite of the boudin has deep, dark flavors that unfurl forever, meaty, funky and sweet, like the carnivorous version of the best wine you've ever drunk.
