You might be fooled into thinking, at first glance, that Má Pêche's frisée aux lardons with tripe is just a big bowl of salad. But root beneath the spicy greens and find a wiggly poached egg, crunchy pork-jowl lardons, and, at the very bottom, a tomato-based tripe stew. The tender braised stomach lining takes the traditional French salad to an unexpected level of richness and textural appeal. Break the egg, and mix it all up into a fantastically smoky-sticky mess.
