The slow-moving, Italian-born pie master quietly and carefully builds each one himself. A plain pizza involves San Marzano tomatoes, fresh mozzarella, Grana Padano, a generous drizzle of olive oil, and freshly snipped herbs (sometimes oregano, sometimes basil).
