Bien Cuit
This small Brooklyn bakery turns out some of the finest breads and pastries in the city. Croissants are cooked nice and dark, for crisp tops and bottoms but airy centers; the miche is seriously crusty and full of character; and we spent the whole summer obsessing over Bien Cuit's cantaloupe-and-chocolate tart.
