Meticulously curated with lamps and woods salvaged from a defunct 19th-century schoolhouse, if The Wayland were in less capable hands than the sandwich-crafting mitts of chef-owner Robert Ceraso, the airy bar would simply be known for its boundary-pushing cocktails and a tap that pours Fernet and house-made cola. Recently, though, the chef and his partners annexed a small foyer space with its own entrance into a full-fledged sandwich shop called Animals, and a few creations from the daytime menu make the transition to evening eats. Along with greenmarket vegetables, hungry imbibers can pad their stomachs with baguettes overflowing with slow-roasted pernil marinated in sour orange, or tender pulled chicken braised in a mixture of apples, tomatoes, fennel, and chiles, topped with spicy pickles and cilantro aioli, all layered between two slices of country bread. Even small plates get big attention to detail, including sausage bread from Pecoraro bakery in Jersey City, and a bowl of mixed nuts tempered with honey, paprika, and rosemary.
