Best Carnitas New York 2013 - El Atoradera
At first glance you wouldn't think that El Atoradera, a standard-format bodega in the Bronx, would dole out anything special, let alone the best carnitas in the city—there's not even a kitchen in there. But on Saturday and Sunday, owner Lina Chavez drags a deep cauldron into the center of the room to simmer chunks of pork in its own fat, accenting the pig with fresh orange, tequila, bay leaf, and Coca-Cola. What is dredged up from the bottom is softened and crispy, well-seasoned and deeply caramelized. Folded into a taco or on a sope with a couple drops of salsa, these carnitas are ideal.
