With more than 1 million Puerto Ricans living in New York, it's surprising that the islands' cuisine doesn't get more attention. Meets NYC, an organization that educates locals about the dishes of cultures from around the globe, wants visitors to experience an abundance of Puerto Rican flavors this week, from rum to salchichón to pasteles. Eight visiting chefs will be in attendance to collaborate with local luminaries on multicourse tasting menus that highlight the many influences — indigenous, Spanish, African, and American — that make Puerto Rican food so deliciously complex. In one of today's featured collaborations, New York's Carmen Gonzalez joins forces with Puerto Rico's Mario Pagan (Sage Steak Loft).
