When Lone Star State expatriate Autumn Stanford decided to bring the Tex-Czech sweet rolls called kolaches to Brooklyn, she couldn’t leave well enough alone. The result is an improved and expanded pastry: the crust is puffier and more flaky, the buttery streusel toppings sweeter and more profuse. The emphasis has partly switched away from the fruit fillings, so that now savory stuffings have achieved parity. From among the former, the apricot kolache is particularly good, oozing minced fruit and tart enough to make you pucker. From the savory, a jalapeno-cheese pork sausage left us wanting one every day. Dig the rear room and backyard, where you can wi-fi while munching.
