The name attests to the Francophilic nature of Russian food, harkening back to the days when French was the court language of the czars. What this means in practice is butter, butter, and more butter. Take chicken Kiev, a huge breast wrapped around a stick of it and deep-fried–you're supposed to pick it up by the protruding bone and suck the butter out before eating the breast. Also recommended are harcho, a Turkish-tasting soup, and an appetizer of snails inundated with white cheese, cream, and garlic. Bring your cardiologist.
