Of the famed seven moles of Oaxaca, there are three here: negro, coloradito and amarillo. Negro, or black, was the best of the lot, a darkly austere, bitter and complex brew of nuts, spices, plantains, and chocolate. Coloradito (red) is also worth a try, a bit sweeter and more approachable than the black version. Choose light or dark chicken, pork loin or grilled vegetables to soak up the sauce. Chiles and Chocolate deserves credit for striving to do regional Oaxacan properly, so even if the fried masa tortillas in the sopas are a bit tough, we're inclined to cut it slack. The back, tent-like room is very pleasant.
