In a Village Voice review of 16 jerk chicken places in Flatbush (where there are an estimated 50 places that serve the dish), Exquisite Express was named the best. The corner storefront shines like a beacon at the iconic corner of Nostrand and Church on the frontier of East Flatbush, with flames leaping up from the gas-fired grill. The crew is rollicking as they cut up your jerk chicken with a machete, and then offer you two sauces to go on it. Jerk chicken is one of the greatest accomplishments of Jamaican cooking, a barbecued bird coated with herbs, spices, and other flavorings – which can include allspice, thyme, bay leaf, lime juice, soy sauce, and rum. It was supposedly invented by Arawak Indians, who first devised the technique of rubbing butchered wild boars with a spice rub and roasting them in pits lined with pimento wood.
