Named after the murderous wife of a Roman Emperor, Faustina is Scott Conant"s latest project, a hotel commissary in the Cooper Square Hotel. The "hotel" part means that the esteemed chef, whose successes include Scarpetta and L"Impero, has to turn out such predictable pedestrian fare as burgers and fried chicken; nevertheless, the core of the menu remains true to his artistic vision. There are lardo-wrapped prawns, shell-on, in a pool of rosemary-scented lentils, scallop carpaccio with caviar, and, best of all, a big bowl of clams in brodo-a southern Italian classic that the chef makes with a particular flair. The barroom makes a more pleasant place to sit than the dining room.
