The core of the menu are plump, sustainable Prince Edward Island mussels, offered in 23 different one-pound preparations and served in a steamer, with the lid doffed by the waiter for empty shells. But with any variety you pick - be it the classic (herbs, garlic, white wine), Spaniard (chorizo, tomato, red wine, olives), or even the oddball Southern (bourbon, mustard, corn, ham, and cream) - the flavors are only a whisper compared to the clear briny taste of the mussels. Alas, fries are extra, but they're very good, predictably served in a French-style paper cone. A decent lobster roll, chowders, raw bar selections, whole fish, and a steak frites complete the menu at Flex Mussels. A waggish dining companion declared the semi-subterranean interior "like some government café in Canada."
