Ablaze with light in a glass case placed right in the window, the lure is a pail of braised pig knuckles, brown-skinned, oily, and delicious. When we went inside to order a dose, the clerk removed one, a foot in length, from the case and then took a propane torch to the exterior. To burn off the hair? Then she grabbed a knife and deftly cut the meat from the bones, arranging it carefully in a broad styrofoam container with a couple of thimbles of dark dipping sauce. The cost: $10. Thereas also a serious-looking Korean restaurant in the back room.
