At this offspring of the popular Borgo Antico, the rabbit is exemplary;swathed in a thick, dark sauce and heaped with polenta, sided by barely steamed baby carrots. A similar bunny ragu is also poured over pappardelle, but king of the pastas is a spaghetti-like tagliolini blackened with squid ink and dotted with intensely flavorful baby clams. The rotating entrees are so rich with olive oil, you might want to start with one of the more modest appetizers, like the grilled vegetables or mozzarella and tomatoes.
