Named after an ancient civilization in Pakistan and northwestern India, Indus Valley is located precisely at 100th and Broadway in an area far removed from other Indian restaurants. While the menu is rooted in Punjabi cuisine, the joint makes an effort to incorporate regional recipes from elsewhere, and it is among those dishes that most of the action resides. The prune-stuffed roulade called lamb pasand is worth eating in its sweet creamy gravy, and so is the Indus Valley dal, a meat-free mixture of lentils and split peas in a dark flavorful sauce. Skip the vindaloo, however, which tastes too much like plain ketchup.
