King of Casserole! The name inspires confidence--well placed, as it turns out. The restaurant is shiny and spotless, with a small bar serving bubble tea, milk shakes, and slush. The menu offers casseroles with your choice of noodles along with hand-pulled noodles and peel (or knife-cut) noodles in soup, and fried noodles. The knife-cut noodles, shaved from an oblong of dough, are wide, irregular, and chewy--totally delicious and a paragon of their type. We slurped them in a lamb soup, which bobbed with a generous amount of bite-sized, meaty nuggets--likely from the belly, judging from the striations of fat. The broth has long-simmered body and a robust lamb flavor.
