While most New Yorkers, even those who can't afford to go to the top-rated restaurants in town, are familiar with names like Jean-Georges Vongerichten and Alain Ducasse, Wayne Nish, the chef at March, is not a household name. March, which opened in 1990, is a highly regarded new-American restaurant, and Nish, the son of a Japanese-Norwegian man and a Maltese woman, is the perfect guy for a job of creating unimaginable but delicious food combinations. Some examples from the current menu: foie gras with garam masala and port wine apple and sultana puree; hirame sashimi with olive oil and white soy sauce, sesame seeds, and chives; and sautéed shrimp with crushed almond crust, Thai curry, and mango.
