Andy Ricker has brought a little piece of his Portland, Oregon, restaurant Pok Pok to the Lower East Side. The menu at this tiny, casual spot is notably brief: tangy green papaya salad, soy-cooked pork over coconut rice, roasted peanuts, Stumptown coffee, drinking vinegars, and, of course, the chef's famous sticky-sweet chicken wings. The secret to the dish's success lies in first marinating the flappers, then deep frying them until crispy, followed by a dousing in a garlicky, caramelized fish sauce dressing. Delicious and totally worth the hype.
