Based on the theory that if you don't cook vegetables, they're actually alive, Quintessence is like a trip to the meat-free food zoo. The eating is adventurous, not in terms of the ingredients themselves (mainly fresh, organic veggies, lots of nuts, seeds, and grains, no dairy), but more in the combinations and presentations. (Consider the "black olive and cream dim sum" appetizer). Just to be clear: This is a raw, vegetarian, vegan, kosher restaurant. Have fun!
