With its raised tatami platforms, this place looks like a Japanese restaurant, and parts of the menu might confirm that diagnosis - the bean curd, for example, littered with bonita shavings. But Red Chopstick is Taiwanese, a cuisine that exhibits Japanese elements. While unique Taiwanese passions like "smelled" curd (try it fried) are very much in evidence, the majority of the dishes are pan-Chinese, with a penchant for southern Chinese that includes pristine whole fish swimming in tanks just prior to preparation, bright green loofah heaped with garlic, and rice done dozens of ways (try it steamed in a log with Chinese sausage). Hint: always begin your meal with a soup.
