Neuroscientist Dr. Miguel Sanchez Romera's eponymous restaurant in the Dream Hotel is an experience for the senses—not to mention the wallet. He's dubbed his style of cooking "neurogastronomy," since he uses medicinal principles in crafting his six-, nine-, and 12-course menus, which range in price from $125 to $245. Some plates are truly exquisite, like a foie gras en cassoulet with black truffle and duck jus and an onion rice with raw seafood. Others, like a mosaic of dried vegetable powders, confound more than they stimulate. At these prices, though, you should never be second guessing anything.
