The "royal" cuisine of Thailand was a 19th-century invention of a gourmet king. This is one of the best places to enjoy it, with a broad range of carefully prepared dishes accented with ginger, garlic, and holy basil, and swimming in rich coconut milk. Check out the ethereal duck salad;nuggets of crunchy-skinned Daffy tossed with purple onion, roasted cashews, orange sections, red peppers, and tempeh in a tangy tamarind dressing. Or pick any of the whole-fish preparations like pla chu chee;sea bass smothered in a unique curried peanut sauce that will leave you licking the plate after the last morsel is gone.
