The best northern Indian restaurant in Astoria may be Seva, where a nuanced take on the brown-gravied cuisine makes every dish taste dramatically different. The name means "selfless service," and when you dine there, you feel like you're sitting in someone's living room--in a good way. The kormas tend to be richer and nuttier that expected, but choose lamb in preference to chicken, which is made with breast meat instead of bone-in bird.
