Located on a stretch of Liberty Avenue that caters to ethnic Indians from Trinidad and Guyana, Singh's features a wonderful L-shaped steam table and a counter filled with all sorts of goodies like toolum-coconut balls flavored with ginger and molasses. You can have a goat or conch roti rolled up in the usual fashion, or presented with a flatbread on the side as a "buss up shot" (dialect for "busted up shirt," referring to the crumpled bread). In addition to fish-bearing bakes, there are also vegetarian dishes like bhaggie, bodie, and pumpkin.
