Not sure what Buddhism and raw fish have in common, but this august, high-ceilinged institution near Times Square is one of the most revered sushi parlors in town, with the selection of fish running (or swimming) to 70 varieties. Comparing mackerel sashimis while blowing a wad of cash can be sublime, but much of the action is around the edges of the menu in the more daring dishes-a duck-stuffed Chinese egg roll presented as a pyramid, for example, or a five-species assortment of imported Japanese mushrooms dressed with garlic and shredded red pepper, cooked "en papillote" (really, it's steamed in aluminum foil).
